Grazing Tables: Simple Appetizers for Large Parties
A grazing table is a presentation method that takes the pressure off of cooking for the masses. Usually I buy everything for the grazing table at the store with the exception of two to three items I prepare myself. A couple savory dishes and always something sweet.
Start with butcher paper. Butcher paper can be multipurpose.
It wraps a present, steams a brisket hot off the grill, and displays appetizers during large gatherings.
Once I lay out the butcher paper on a centrally located table (usually our dining room), I secure it with masking tap beneath the tabletop to keep it in place. Then I start the process of scattering all the store-bought goodies directly on the butcher paper. Anything oily ought to go in a dish or bowl instead of directly on the paper. Sweaty carafes can also go on trivets or hand towels.
A variety of nuts, dried fruit, crackers, popcorn are arranged from one edge to the other. Then I fill in empty spaces with platters of homemade sweet and savory items like meatballs and cakes. As well as florals, candles and disposable scoopers, plates, napkins, and utensils.
Once everything is laid, grab a marker and label each treat. It’s these times I wish I was a skilled calligrapher but, alas, bold print works just as well. When labeling, I often let the letters fall or go crooked around the splayed nuts or cocktail pitcher. If I have kitchen helpers I give them credit and name the cookies or cocoa after them. Have fun with the rustic and easy-going nature of a large grazing board.
