I truly adore Zoe Francios recipes. They are accurate and expertly written to the point they seem foolproof! My bakes often look as stunning as her photographs—well, almost. Most importantly the crumb structure and flavors are perfection. Every attempt at baking Francois’ creations makes me feel like a professional baker!
Well, with the exception of her hazelnut daiqois recipe… that one needs more finesse on my end. Even though enjoyed by all, the two attempts I have made looked a bit rough and ready. But still, even saying, “daquios” makes me sound like I know what Im talking about.
The only adjustment I made to this recipe was cutting the recommended banana quantity in half. I took the gamble because not everyone in my home likes the flavor so I was aiming to dampen it a bit. In turn, it made for a runnier batter but less dense cake. Fantastic! I mean it almost deteriorates in the mouth.
If you chose to do the same, piping will be trickier as the batter runs from bag speedily. Simply fold back the piping tip and place into a tall drinking glass before filling with the batter. When ready to pipe remove the bag from the glass by reaching in to secure the tip back on itself with your fingers. Slowly let the tip end unfold over the doughnut pans when ready to pipe.
