Homogenized Cheese Parfait
While clearing out bookmarks and favorite tabs on my computer, I came across a blogger I’ve been inspired by for years. It had been awhile since visiting her site. As I scroll through beautiful recipes, I stopped short on the photograph for Super Vanilla Homogenised Cheese with Raspberries wondering, what in the world is homogenized cheese?!
Simple.
Homogenization is the process of blending milk products — one with solids— into cream.
In this case, cottage cheese and yogurt are whipped together into a smooth cream and topped with sweet marinated berries. The texture is sublime and the brightness of the lemon zest offsets the sweetness; don’t skimp on zest!
Zachary and I were delighted upon the first bite. Try not to make yourself sick on this one.
Ingredients
1C full fat Greek Yogurt
250g cottage cheese
1 tsp vanilla paste
2 Tbsp sugar
1C diced strawberries
2Tbsp agave syrup
Zest of 1 lemon
Method
In a medium bowl whisk the cottage cheese, yogurt, vanilla, sugar with a hand mixer until smooth but a few cottage cheese curdles are welcome. I like it that way.
In a small bowl toss fruit with syrup, and zest.
Drop a tablespoon of the fruit mix in the bottom of a glass then layer generously with cream mixture. Add another tiny bit of macerated fruit and juice on the top of the cream. It’s that easy.
