Homemade Ice Cream

It’s that time of year! The afternoons are a filled with blazing sunshine and cool treats are a welcome motivation to everyone in the household. Once I learned a very basic ice cream recipe from Nadiya Hussain we have all but created every favorite concoction we’ve come to love from traveling or local ice cream parlors.

Active Prep: 5 minutes

Wait Time: 8-10 hours (overnight)

Makes: 1 container of ice cream

Kitchen Supplies:

  • kitchen mixer (stand or handheld)

  • large bowl

  • loaf pan or storage container

Pantry Staples:

  • 1 can of sweetened condensed milk (14oz)

  • 2 C cold heavy cream

  • 1 Tbsp vanilla extract

  • pinch salt

  • favorite ice cream flavor (ex: matcha, caramel, vanilla bean, chocolate, cardamom, cookie crumble)

Instructions:

  1. Add all ingredients except flavoring in large bowl

  2. Whip wet ingredients to soft peaks

  3. Add fillings or flavoring

  4. Whip further to medium peaks

  5. Pour whipped cream into storage container, cover and chill overnight

Additional notes: This recipe is so simple the children can help and feel proud of their delicious dessert.

This week the kids were a bit split on ice cream fillings so we made a double batch. My boys were pleased to suggest salted caramel but the girls love classic vanilla. So Sissy and I made both since we had homemade caramel on hand.

When it comes to adding ice cream flavors taste testing is key. You’ll want to get your cream to soft peaks before adding flavoring as not to knock the air from the cream or delay the process of whipping. You can also wait to add certain fillings until the cream is whipped fully and in the container. This is especially true of more dense fillings like cookie crumbles.

For our salted caramel ice cream (picture above) drizzle Maldon salt and caramel into the fully whipped cream once in the storage containers. With a cake skewer I swirled the caramel through the whipped cream then placed it in the freezer. For the vanilla we added extract and scraped the inside of a vanilla pod. It’s too easy!
