Garlic Infused Olive Oil

Garlic confit is delicious but try this infused garlic oil! It is even quicker to prepare and adds a hit of flavor to a variety of dishes. Drizzle it on on roast chicken. Marinate lettuce for a side salad. Or do what I did and substitute it for olive oil in a focaccia bread recipe. My guests were totally pleased by the results.

Total Time: 15 mins

Yields: 1/2 C infused oil

Pantry staples:

  • 10 garlic cloves; peeled

  • 1/2C olive oil

  • 1/2tsp salt

Instructions:

  1. Put all ingredients in a sauce pan and bring to a boil.

  2. Once boiling, reduce the heat to low simmer for ten minutes.

  3. Remove from heat

  4. Add salt and swirl the pan until dissolved

  5. Let the oil cool completely in the pan

  6. Remove garlic cloves and use for another project (garlic toast, guacamole or a marinating paste) or keep in the oil

  7. Transfer oil into a small jar with lid

  8. Oil ought to be good on the counter for a week or two.
