Cardamom-Apricot Knots

I am fascinated by how many creations can be concocted from one bucket of dough.

The bucket bread recipe has made Bread Day streamlined. And it will last, in the refrigerator, the entire week!

From the recipe I can make enough bread for our family to last about two weeks once sliced and frozen. I usually prepare two sandwich loaves and two rustic loves. If I am not making it to last in the freezer for tartines, grilled cheese, or side for supper it is a game changing recipe for getting breakfast on the table too.

I’m going to work on rewriting the enriched dough recipe and sharing it soon. Along with my bread day rhythms, if it helps.

When my son asked what was for breakfast (at dinnertime the night before) I grabbed at straws. Without a true plan, I thought I’d use the last bits of enriched dough from the bucket in the fridge to make something. The amount remaining in the bucket wasn’t enough for cinnamon rolls but I had been eyeballing an apricot danish recipe.

I felt inspired.

Sprinkling dried apricots and freshly ground cardamom (Easily my favorite kitchen spice. I almost named this blog, Cardamama) into the dough and twisting them into pretty little knots to prove for half hour before baking them off. The family snatched them up before the hot apricot jam had time to soak in.
